Prepare the Ham
- Position the oven rack in the lower position. Preheat the oven to 250°F (Bake mode).
- Line a half-sheet baking pan with aluminum foil. Place an oven-safe nonstick rack on top of the prepared pan. Open the oven bag and place it over the rack.
- Position the ham, cut side down, inside the bag. Insert the thermometer probe into the thickest part of the ham, ensuring the probe is centered and does not touch the bone.
- Close the oven bag with the provided tie. Set the food thermometer to alert when the internal temperature reaches 110°F.
Bake the Ham and Prepare the Glaze
Place the ham on the lower oven rack. Bake the ham until it reaches an internal temperature of 110°F. For reference, an 11 lb. ham will typically take around 4 hours to reach this temperature.
- While the ham is baking, combine pineapple juice (or mango juice), brown sugar, cornstarch, Dijon mustard, garlic powder, cinnamon, nutmeg, paprika, and pumpkin spice in a saucepan. Whisk to combine.
- Over medium heat, whisk the glaze continuously until it thickens, approximately 3-5 minutes. Once thickened, remove from heat and transfer to a measuring pitcher.
- When the thermometer alerts you that the ham has reached 110°F, remove the ham from the oven. Set the oven to Broil at 400°F and let the ham rest in the oven bag while the oven heats up.
- Puncture a small hole in the oven bag to allow the ham juices to drain into a measuring pitcher.
Take ¼ cup of the reserved ham juices and whisk it into the prepared pineapple glaze. The remaining juices can be saved for drizzling over the ham or for making gravy.
